I love to cook. There's something about cutting vegetables and figuring out sauces and spices that is very, very therapeutic -- right? Below, I've included the recipes of two really good meals I fixed recently. Let me know what you think!
Chocolate Chip Waffles with Cinnamon Apples
Ingredients:
Butter/non-stick spray
Waffle mix; I used box mix, so that means I also needed whatever the mix required (oil, eggs, etc). Chocolate Chips
Apples
Cinnamon
Water
Supplies:
Saucepan and spatula
Knife
Cutting board Bowl
Waffle iron
Steps:
While your saucepan and waffle iron heat up, begin to dice your apples.
Melt some butter in the saucepan before putting all the apples in. I also add a little water.
Mix your waffle batter, spray the iron (I use the non-stick spray for this part), and pour the batter into the iron! I wait until this step to put in the chocolate chips so that I know they are evenly dispersed.
When your apples are sauteed to your liking, sprinkle the cinnamon on them, and mix them up so they're coated. Mackenzie said she thought they looked like potatoes, and I wasn't quite sure how to respond...
Place the waffles on your plate, drizzle some syrup on them, and then top them with the apples! Pair with a movie and a cup of tea to really make things ~cozy~.

Teriyaki Chicken with Maple Sriracha Vegetables
Ingredients:
Butter
Chicken
Apples
Carrots
Celery
Maple Syrup
Sriracha
Teriyaki Sauce; You can use any sauce you think would be better, but this is actually really, really good
Supplies:
Knife
Cutting board
Saucepan
Dish for the chicken
Steps:
Preheat the oven at whatever temperature it says on your bag of chicken. I have frozen chicken, so mine is around 375.
Dice your apples, celery, and carrots.
Melt the butter in the saucepan and place the produce inside. I also add a little bit of water.
When the vegetables are sauteed, add your desired ratio of maple syrup to sriracha and turn the stove to a lower heat so the mix will simmer.
Place your chicken in the dish and cover in teriyaki sauce. When the oven is ready, place inside and cook for its allotted time. Mine is around 30 minutes.
When your chicken is done, take it out, check that it's cooked thoroughly, and you're ready to eat!
